:: Pepper

Pepper has been called the “King of Spices”. Pepper has been moving westward from India for 4000 years. It has been used in trading as an Exchange medium like Money and has been valued so highly.

Pepper comes from of vinous plant called Peppercorns. There are tour types of pepper. The first one is the Black pepper. This is the dried, unripe berry. The corns are wrinkled and spherical about 5mm in diameter. The second one is White pepper starts about the same as the black one but is allowed to ripen more on the vine. Then is removed its shell by soaking the berries in water until the shell falls of, or are held Ander a flowing spring water, yielding a whiter and clean pepper. There are a Green pepper as well, and this comes from the same fruit but is harvested before they nature. And finally exist a Pink pepper; this one comes from the French island of Reunion. Pink pepper corn has a brittle, papery pink skin enclosing a hard, irregular side, much smaller than the whole fruit.

Pepper is very useful into the food. With hot food it is best to add pepper, towards at the end of the cooking process, to preserve its aroma. On the other hand white pepper is used in white sauces rather than the black pepper. Also green peppercorns can be Meshed whit garlic cinnamon or to make a spiced butter or with cream to make a fresh and attractive sauce for fish. Pink peppercorns are called for in a variety of dishes, from poultry to vegetables and fish

Pepper has been attributed medicinal properties, like: aromatic stimulant, antibacterial, stimulates the taste-buds causing reflex stimulation of gastric secretions, improving digestion and treating gasto intestinal upsets and flatulence. Pepper also calm nausea and raises body and temperature.
